PASTELES EN HOJA (PLANTAIN AND BEEF POCKETS)

Pasteles en Hoja are popular in the Dominican Republic and Puerto Rico. A plantain (or unripe banana) and root batter is used as the base then they can be stuffed with beef (most common stuffing), chicken, or whatever strikes your fancy.

INGREDIENTS

For the Batter Ripe Plantain Yautia (malanga) auyama (kabocha squash) seasoning powder milk salt butter bija powder

The Batter

Pureé the batter ingredients until there are no clumps but feels like grains of sand in it. It may take 5-10 minutes depending on the blender/processor.

Wrapping

Put 2.5 tbsp of the batter mix on a plantain square. Put 2 tbsp of filling in the center.  Cover with 2 more tablespoons of the batter. Fold the leaf square and wrap tightly in parchment paper.

Boiling

Bring a pan of water to boil, lower in the pasteles. Cover and cook for 40 minutes. Then remove from the pot, unwrap and check for doneness. 

Serving

Serve right after unwrapping, garnished with hot sauce and/or ketchup.
