Why we ❤️ it
At home, a whole stack of whole wheat banana sugar-free pancakes awaits me (courtesy of my kid with dad's assistance) while I'm sitting in one of the many waiting rooms in which modern humans waste a considerable amount of their lives.
These fluffy, sweet, flavorful pancakes are so easy to make that even a child with a beginners-level skill in the kitchen can make them (children who are not able to use the stove need assistance, goes without saying).
No children (or adult) will resist them, especially if they had a hand in making them.

I'm not a sweet breakfast person. It's savory for me any day, but these fluffy pancakes are one of our family's favorite weekend breakfasts. They are not sickly sweet and are very quick and easy to make. Most importantly, my daughter loves them too.
Depending on what your preferences, you can drizzle with honey, served topped with fruits, add butter, or sugar-free syrup (see notes). Even plain they are treat.

Ingredients
- 2 banana, very ripe
- 2 egg (medium)
- ½ cup whole-wheat flour
- ¼ cup almond milk
- ½ teaspoon baking powder
- ¼ teaspoon salt
- Oil spray (for greasing)
- 1 cup fruit, see notes
- Honey or syrup, optional, see notes
Instructions
- Mixing: Mix bananas, eggs, flour, salt, milk, and baking powder. Blend to a smooth mix.
- Cooking: Coat a non-stick pan with oil and heat to medium temperature. Add four tablespoons of pancake mix and cook until it's brown on one side. Flip and cook similarly on the other side. Repeat with the rest of the mixture.
- Serving: Serve with the fresh fruit and drizzle with a small amount of honey if you wish.
