Why we ❤️ it
It's that time of the year I start complaining about the humidity and the heat hotter than a thousand supernovas that we have to endure in the tropics.
So yet again I turn to my beloved paletas to combat the heat, this time inspired by famous drinks from 3 of my favorite countries. Wouldn't you love some sangria, mojito, and piña colada popsicles in this weather?
About these recipes
To make them into popsicles, I made a few changes to the traditional boozy drinks we all love. Booze optional, but encouraged.
Adding alcohol to popsicles
Adding alcohol will lower the freezing temperature of the water [1], so we have to be careful not to exceed the amount of alcohol in the recipe --even if tempted-- or they will not freeze. Adding even a bit more alcohol --in my experience-- made them thaw too fast to enjoy.
This is definitely not the kind of thing you'll get even tipsy from at the suggested serving.
Piña colada popsicles
A combination of fresh pineapple and coconut milk, this is a very close approximation to the original Puerto Rican drink.
Sangría popsicles
A frozen version of the popular refreshing Spanish drink. Here compromises were made, wine makes for lousy ice pops, so I switched it to grape juice. Add a tiny bit of vodka for booziness, or not... your choice.
Mojito popsicles
A Cuban classic gone international, this has the super-refreshing touch of mint and lime juice that we all love.

Sangria, Mojito and Piña Colada Popsicles Recipe
Ingredients
Sangría paletas
- 3 cup of grape juice
- ⅓ cup of diced fruit, (I used apple, grapes and strawberries)
- 2 tablespoons lime juice
- 2 tablespoons vodka, (optional)
Mojito paletas
- Juice of 3 limes
- 6 mint leaves, minced finely
- 2 tablespoons white rum, (optional)
- 6 tablespoons sugar (white, granulated), (or to taste)
Piña colada paletas
- ½ cup diced pineapple
- 2 tablespoons white rum, (optional)
- 3 cup coconut milk
- 6 tablespoons sugar (white, granulated), (or to taste)
Instructions
- Making sangría paletas: Mix ingredients.Pour into molds, place sticks, and freeze.
- Making mojito paletas: Mix lime juice, and mint leaves. Add 3 cups of water, rum, and sugar to taste.Pour into molds, place sticks, and freeze.
- Making piña colada paletas: Blend pineapple, rum, and coconut milk. Sieve to remove solids. Add sugar to taste.Pour into molds, place sticks, and freeze.
